  • 6 medium sweet potatoes
  • 1/2 cup butter, diced
  • 1/4 cup coconut sugar
  • 1/2 cup blanched almond flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 1 cup toasted pecan pieces
  1. Preheat oven to 400°F.
  2. Wash sweet potatoes and prick each with a fork in several spots. Place on baking sheet and bake for about 45 minutes, or until a knife can be easily inserted down the center.
  3. In a large bowl combine butter, coconut sugar and almond flour until crumbly. Stir in the cinnamon, salt and pecans until well combined.
  4. Slice the cooked sweet potatoes lengthwise and push ends towards tthe middle to open them up slightly. Layer potatoes in a baking or casserole dish.
  5. Stuff the potatoes generously with the streusel topping and return to the oven for another 20 minutes, or until the top is bubbly and brown.
