Pecan Streusel Sweet Potatoes

Ingredients
- 6 medium sweet potatoes
- 1/2 cup butter, diced
- 1/4 cup coconut sugar
- 1/2 cup blanched almond flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon sea salt
- 1 cup toasted pecan pieces
Method
- Preheat oven to 400°F.
- Wash sweet potatoes and prick each with a fork in several spots. Place on baking sheet and bake for about 45 minutes, or until a knife can be easily inserted down the center.
- In a large bowl combine butter, coconut sugar and almond flour until crumbly. Stir in the cinnamon, salt and pecans until well combined.
- Slice the cooked sweet potatoes lengthwise and push ends towards tthe middle to open them up slightly. Layer potatoes in a baking or casserole dish.
- Stuff the potatoes generously with the streusel topping and return to the oven for another 20 minutes, or until the top is bubbly and brown.
