Heirloom Brown Butter Carrots

Ingredients
- 1 bag carrots
- 3 tablespoons butter
- 2 tablespoons honey
- 2 cloves crushed garlic
- 1/4 teaspoon dried thyme
- Salt and pepper, to taste
Method
- Preheat oven to 400°F. Line a sheet pan with parchment paper and set aside.
- Trim ends off of carrots. You can peel the skin off as well if desired.
- Lay carrots on parchment paper and set aside.
- In a small saucepan, heat butter over low heat. Stirring constantly until butter browns, about 5-10 minutes. When butter resembles a hazelnut aroma with a lightly brown color, remove from heat.
- Add fresh garlic, honey, thyme, salt, and pepper to the butter and stir until well combined.
- Drizzle butter over the carrots and toss to combine.
- Bake for 35-40 minutes, then flip carrots and bake for another 5-10 minutes, until fork tender.
