A delightful and fresh Beet Salad topped with pistachios and goat cheese!

Ingredients
- 8-10 whole beets, washed and peeled
- 1/2 cup crumbled goat cheese
- 1/4 cup pistachios
- 1 tablespoon avocado oil
- (optional) 1 tablespoon honey, for sweetness
Method
- Preheat oven to 420°F. Line a pan with parchment paper and set aside.
- Slice each beat into thin circular rounds and place evenly on parchment paper.
- Drizzle with avocado oil.
- Roast for 15 minutes, until beets are fork tender.
- Place beets into a serving bowl and sprinkle pistachios and goat cheese over the top.
- Drizzle with honey and serve.
