A delightful and fresh Beet Salad topped with pistachios and goat cheese!

  • 8-10 whole beets, washed and peeled
  • 1/2 cup crumbled goat cheese
  • 1/4 cup pistachios
  • 1 tablespoon avocado oil
  • (optional) 1 tablespoon honey, for sweetness
  1. Preheat oven to 420°F. Line a pan with parchment paper and set aside.
  2. Slice each beat into thin circular rounds and place evenly on parchment paper.
  3. Drizzle with avocado oil.
  4. Roast for 15 minutes, until beets are fork tender.
  5. Place beets into a serving bowl and sprinkle pistachios and goat cheese over the top.
  6. Drizzle with honey and serve.
